What kind of SEO keywords should a recruitment company use?

I am relatively new to the world of SEO and have been given responsibility to improve SEO rankings for our company website (which is full of jobs). We are London based digital media recruiters and work in a number of niche industries. Should job titles be the keywords I try and optimise, as opposed to keywords such as 'digital media recruitment london', 'London digital marketing jobs', 'digital media recruiters in london' etc?
Today I have signed up for a month's trial on Moz Pro so am hoping this will provide me with a lot of help as I start creating an SEO strategy,
Any help or advice would be greatly appreciated.

I am not from that industry but in my opinion you are along the right lines,
London Digital Marketing Jobs seems like a good choice, To back this
I would take a look at the Bing Webmaster tools if you have them setup ? They offer a wealth of keyword information that google no longer offer, even if it is a separate search engine personally i would expect search trends to be very similar,
Any chance you have an adwords account ?
The keyword tool does the job well , www.google.com/sktool/
Also try Ubersuggest for Google suggested results , http://ubersuggest.org/
If you do have Google Adwords it is an amazing keyword resource by bidding on general/phrase match keyword, once you have some click data, mark your keywords and look at the keywords search terms selected data, I then disallow any search terms we don't want, Using this we have collected a lot of keyword data,

What defines what words in a title are considered Keywords?
Hi, sorry if this is a silly question. I'm curious how keywords are defined. Is every word in a title a possible keyword? If I have a keyword titled "Linear Shower Drain | 40" Long", does it take the whole thing as a keyword? Is just "Linear Shower Drain" the keyword? I have a question about the use of Apostrohes in the text of your site for your keyword. Most of the info I have found says in most cases it does not matter, but it depends. Most of the info about this issue I have found is a few years old. I am leaning towards not using it at all to make it easier for everyone writing for the website to always do it the same way. When is it wrong to use a competitors brand name?
I recently started with a company who've benefited from using a competitors brand name to explain why theirs is superior. They're not wrong and neither have they been derogatory, however they have had significant traffic to their website using the competitors branded search terms. I'm concerned Google will penalise us for this (if so can you point me to case studies/similar examples), or am I worrying unnecessarily?

Keyword Themes - What's in a theme?
I recently read the Moz guide for "How To Rank - 25 Step SEO Master Blue Print" and had a question on keyword themes. What is considered a theme? Is there a recommended number of keywords in a theme? For example, if my site is for listing and selling cars, would the following terms fit within the same "car" theme or should the terms be broken out by "cars general" / "car locations" / "car types"? Adding qualifiers to keywords?
I know that it's worth adding qualifiers to high value keywords to create long-tail variations which will later have the potential to rank well for the main keyword as well... My questions is, how important is it that the newly-formed keyword/phrase also be evaluated for search volume? E.g. "tips for job interviews" has a high search volume, but scores 72 in the Keyword Difficulty tool - quite high. I would therefore be tempted to create a "10 tips for job interviews" articles or something similar, yet THIS particular phrase is searched for <10 times per month... If there are not any easy-to-find qualifiers that also create a well-searched for keyword/phrase, is it still worth adding them?

Keywords for multi service business?
New to this so bear with, I am a TV aerial, satellite, CCTV, Door entry, Access Control, Telephone repair engineer. I have one seperate page for each of the installations I carry out as well as the basic home, about, areas, faqs and so on.
